Yes, that’s right a low carb cheesy bread and boy is it delicious… I found this recipe and I just had to try it out. I am always looking around the internet for a better choice when it comes to any food that I love but don’t want to feel tired after eating. Yes we could do the normal pizza from local delivery, but then you are so tired after filling up on a standard pizza. I am at the point in my life that I want a Healthier Lifestyle and feel great after eating. What about you?
Yes, it takes some preparation but what does that matter, I love to cook anyway and Wow look what you get in return for your trouble a beautiful brick oven type pizza that you can really enjoy and doesn’t way you down!

YIELD: 4 servings
- 1 cup + 2 tbsp shredded low-moisture park-skim mozzarella cheese
- 6 tbsp. Almond Flour or Simple Dough Pizza Mix
- 3 tbsp Organic Coconut Flour
- 1/2 tsp baking powder
- 1/4 tsp crushed red pepper flakes
- 4 tbsp butter
- 1 egg, beaten (Eggsland’s Best)
- 1/4 tsp Sea Salt
- 1/8 tsp freshly ground pepper
- 1/4 tsp oregano
- 1/4 tsp Organic Garlic Powder
- 1/2 tsp dried parsley
- 1 clove garlic
- 1/2 cup pepper jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 tbsp extra virgin olive oil
- Roast your own Pine nuts (optional)
Preheat oven to 400 degrees
Melt shredded mozzarella cheese in microwave for 25 seconds until it forms one melted ball of cheese.
Combine almond flour, coconut flour, baking powder, 2 tbsp butter, garlic salt, egg, parsley, salt and pepper. Place the wet dough mix onto a cutting board. Combine with melted mozzarella and use a kneading motion to combine the cheese into the flour mixture. This will take about 3-4 minutes to get the dough to a proper, combined consistency. Keep kneading!
Place a sheet of parchment paper on a baking sheet. Roll out dough into a circle and place on the baking sheet. Drizzle with olive oil. Bake for 8 minutes, or until edges become golden brown and crispy. Remove from oven.
Combine 2 tbsp butter and garlic clove in microwave-safe bowl. Microwave for 45 seconds, until butter is melted and infused with garlic. Remove garlic clove and rub on cooked crust. Discard when done. Drizzle crust evenly with garlic butter.
Top buttered crust with oregano and mixture of shredded jack and cheddar cheeses. Bake for an additional 7 minutes, until cheese is melted and bubbly. Top with the Pine Nuts (optional). Slice into sticks and serve.
Pine Nut garnish, ( I roast my own!) I put about a tsp of Olive oil (remember olive oil is heart healthy) in a skillet add pine nut about a half of a bag and roast over medium heat until they turn a little brown and they are done. Drain on a paper towel to remove excess olive oil and then sprinkle on top of your amazing cheesy bread.
